He doesn't have much knockout power or world class submissions, but he has been able to fight against his opponent's weeknesses in his 3 fights in the UFC to win them on points. While he looked impressive and comfortable, I think is opposition was weak. He beat Colin Fletcher who has since been released from the UFC. He also beat 2 relatively unknown Asian fighters, who are not known for their strength. Norman Parke was able to outpower and impose his will on them and earn 2 decisions. His overall record of 19-2 is impressive, but he was fighting on the Ireland/England circuit, which has been week during 2008-2011 when he earned all his wins.
Leonardo Santos is a big step up in opposition for Norman Parke. Santos has a 12-3 record. In 2007, he had a record of 1-2. Since then, he won 11 out of his 12 fights with his only loss being by split decision. He has been fighting on the Brazilian circuit, which is much stronger than the English/Irish circuit. The brazilian circuit is full of very athletic brazilian fighters and full of high level black belts in Brazilian Jiu Jitsu. Santos is a high level black belt himself, who won several BJJ world level competitions at black belt between 2000 and 2005.
I think the reason Norman Parke is favoured by the bookies is because he only had 3 fights in the UFC, while Santos had 1, so Parke is more well known.
I will back Leonardo Santos because this fight is much closer than the odds suggest. Leonardo Santos has been fighting better fighters and has a world class submission game, as well as good wrestling. Parke hasn't faced a good wrestler yet, so I think Santos will be able to take him down and submit him. The brazillian support will be a big advantage for Santos too as the Brazilian support is always loud and hostile.
